There is jounce in handle.How to repair it.
If you find it after purchase, please contact us without use. We will repair or replace it. If jounce is happened in common use, there is some possibility of erosion by moisture. If erosion inside grip is not so deep, we can change to new grip with some charge. Inserted wooden grip knife like Japanese cooking knife is not fixed by glue, nail and etc. If you find jounce, please hit grip end by hammer or floor a few times. It shovld be done at fixed intervals.
How to dispose old knife after buy new one.
Our knives would be used so long time while re-sharpening is possible. However, if knife live out it' s life and you want to dispose it, please dispose it by dangerous thing after convolve it by newspaper or etc. Please ask to your living municipio directly or refer guidance because each municipio has each rule for dust. Besides, we can repossess just our products by pre-paid transportation fare we will disintegrate and recycle it by our obligation
What is difference between "Chef knife" and "Santoku knife"?
Chef knife came to Japan with European culture on Meiji period. In that period, Japanese don' t have a habit to eat beef then, "Chef knife" was named "Beef knife" in meaning of cut beef. As you can imagine, Chef knife is suitable to cut meat and aiso called "Wesiern knife" .
Santoku knife is made with correcting good points of Chef knife, Thin blade knife and Sword type knife. Santoku knife is suitable to cut vegetables and etc. This knife is made for household use then, this knife can cook almost meals. Then it is also called "Almighty knife" .
What is the difference between Western knife and Japanese knife?
There are several stories about segmentation of Western knife and Japanese knife.
There is one segmentation as double-edged knife is Western knife and singleedged knife is Japanese knife. However, we, Fuji Cutlery Co. LTD. are dividing this matter by shape and specification of handle. Basically, Western knife has anchored handle and Japanese knife has inserted handle in professional knife series.
