2.取少量的盐、味精、料酒、胡椒粉搅匀,将银鳕鱼腌20分钟。

3.取一枚鸡蛋,取用蛋黄,将蛋黄打散均匀地涂抹在银鳕鱼上。
4.将生粉倒入盘中,用涂上蛋黄的银鳕鱼清蘸生粉,使生粉薄薄地贴满银鳕鱼,两面均匀蘸生粉。
5.煎锅烧热,倒入花生油。油温在8成热时把银鳕鱼放入,中火煎炸,煎至两面金黄,再开大火煎下,为了使煎炸时侵入银鳕鱼中的油逼出。
