在加面的碗里慢慢加水,一边加水一边搅拌,最后打成非常粘稠的糊糊,注意,水不要过多,最后提起筷子,面要能挂在筷子上,多搅拌一会儿,面会很劲道,搅完以后在碗里加凉水,凉水在面糊上,不要搅拌,过几分钟,水开了,把上面的水倒掉,然后将面粉搅成糊状倒到漏勺里,用勺子背压下去到开着的锅里,一边到一边搅拌锅里的水,就会出现像米粒一样的小疙瘩,而且比较均匀,汤是清的。如果喜欢稠汤,可以把面碗涮一下,然后倒进锅里。
