干辣椒碎经过油炸后苦是怎么回事

干辣椒碎(大辣椒益都红一类的)经过油炸后,吃起来苦,但绝对没炸糊。请大师指点。急急!!
降脂茶、真不干正事、carollutos、狐星圣,各位朋友谢谢了!谢谢你们的帮助!我想做一点自己喜爱的辣椒干煸肉丝,可炸出来的辣椒片都苦的,我火候油温控制的都很好,没炸过火也没炸糊,炸过的油倒不苦,只是炸出来的辣椒片苦。是不是可以加一些别的调料或添加剂,怎么样才能解决这个问题,请各位多多指教,在下感激不尽!

因为火大了,辣椒炸过头了,所以吃起来苦,下面介绍炸辣椒的做法:
准备材料:干红辣椒适量、葱末适量、花生米适量、芝麻少量、油、盐适量、鸡精适量
制作步骤:
1、把干辣椒剪成小段

2、准备花生米,芝麻,这次又加了瓜子仁

3、锅内倒油烧热,倒入辣椒,调至小火慢慢炸,过程中要慢慢搅动,以免糊锅

4、炸至辣椒变颜色以后,倒入葱花等调料,加入适量的盐,开中火再继续搅动

苦事正常的~辣椒的辣素没有全部出来~你在熬制油的时候在剁碎的辣椒里面放一点点水。这样可以使油更红。在放一点点姜葱片和大料。这样你的油就不会苦了!!

炸干辣椒的时候需要特别注意火候,稍不注意就会炸过了,这个辣椒都会变黑了,那样就会不香了,炸糊后就会苦,吃糊的东西还容易致癌。
炸干辣椒的时候一般吧干辣椒放到碗里,用热油浇在上面就行了,这事的油温也不能太高,还要均匀的浇在辣椒上才行。

建议不要吧辣椒放到油里,而是把滚烫的热油浇到辣椒上,这样会好多的…
