一开始的时候放碱,具体做法如下:
准备材料
面粉:三四碗、酵母:少许、碱:少许。
1、面粉加少量酵母粉、食用碱、温水(水稍温一点就行不能太热)揉成面团,盖上盖子或保鲜膜,等发成图中样子,大概面团两倍大内部蜂窝状,用手指戳个洞不会立即缩回去即可。

2、面发好后,再揉几下,揉成长条,切一下放入蒸锅内。

3、锅内铺上蒸布,不想铺蒸布的刷些油也可防粘。可以起火把水烧热关火放置一会儿(大概三四十分钟),让馒头第二次醒发。这样做出的馒头更松软。

4、蒸大概20分钟就熟了,关火,不要立即打开,最好再焖三分钟。
