腌生姜
材料:嫩姜半斤,醋半袋,砂糖二两

做法:1、先将姜皮刮净,切成长薄片

2、放入滚水中煮约三分钟,取出置入冷水中泡2、3小时,然后沥干水分

3、将糖和醋混和,并煮至砂糖完全溶化,然后彻底冷却。
4、将姜放进玻璃容器中,倒入甜醋汁浸透姜,三天即可食用

原料配方
生姜(去皮)100公斤
食盐16公斤

选用白露前的嫩姜。用清水选净鲜姜后,搓去外皮,放入笸箩内,每放一层姜撒一层盐,上多下少。每天翻拌一次,5~6天后即为成品。
